When waiting for new field, there is another way to resolve your problem. List of sidebar is stored in global variable $wp_registered_sidebars. You can loop through this variable to get an options array to use in select field.

After you save the meta box, the data will be stored in database. You can get them on init hook and register new taxonomies.

There is another approach. You can use the select field and pass options as array of post types which we can retrieve via get_post_types() function.

Taxonomy field does NOT save term IDs in post meta, instead of that, it only set post terms. Please read https://metabox.io/docs/define-fields/#section-taxonomy
