When i create a new post, i can't see my taxonomies data. I can add and choose most used ones, but the data i already posted is not present, why?
Please provide more information. How is your CPT set up, how is your taxonomy set up. Did you link them, if yes, how did you link them, from the CPT side, Taxonomy side or both?

Can you please share some screenshots of the issue? Is the taxonomy box a custom field of Meta Box or a default box of WordPress?
