Using the following shortcode: [mb_user_profile_register id="meta-box-id" label_submit="Register" confirmation="Your account has been created successfully." role="editor"]
After submission, the user's role remain as the default 'Subscriber'.

Could you please deactivate all plugins except Meta Box, MB extensions, clear the cache and check the shortcode again?
Yes, I believe it is a cache issue. Cleared browser cache, and everything works properly.
